Seductively laid back, with floral aromatics and autumnal fruits, overlaid with a waft of the garrigue on the expansive nose. The palate reflects this perfectly, displaying both energy and restraint. It has the fragrance I associate with Pommard but more of the weight of Volnay. The tannins are supple and unobtrusive, whilst acidity is poised to provide just enough bite against the plush, mellow, and Juicy black plum and cherry. A generous twist of orange zest and a hint of ginger spice up the long and vibrant finish. It’s singing right now but there’s no rush.


The Bollinger family took ownership of the Domaine in 1999, and marked improvements in quality and appreciation of the wines have resulted from their investments. A modern winery was built in Savigny-lès-Beaune in 2010, where juice and grapes are transported by gravity, and precise plots of land are vinified separately, allowing more precision in the winemaking. New approaches to cooling the grapes on arrival at the winery also allow for longer alcoholic fermentation, in turn improving aroma, freshness and texture in the wines
